Macaroni cheese
Preheat oven to 200°C. Spray 1 large or 4 individual
ovenproof dishes with olive oil cooking spray. Cook
300g macaroni in a large pan of boiling salted water
until just tender. Drain, then
return to pan. Pour 2 cups
Devondale Sm art Milk into
a medium bowl, add 3 eggs,
2 cups grated tasty cheese
and 2 tsp Dijon mustard.
Season with salt and freshly
ground black pepper, then
mix well to combine. Add milk
mixture to macaroni and stir
to combine. Spoon macaroni
cheese into prepared dish or
dishes, then sprinkle top with
1 cup grated parmesan. Bake
for 35-40 minutes for large
dish or 1 5-20 minutes for
individual dishes or until top
is golden. Serve.

Almond macaroons
Preheat oven to 1 60°C. Line an oven tray with baking
paper. Beat 2 eggwhites and

cup caster sugar in
the medium bowl of an electric mixer until mixture
has increased in volume
and is thick and white. Add
110g packet Lucky Slivered
Almonds,

cup desiccated
coconut and 2 tsp rosewater
essence, then stir with a
large metal spoon until just
combined. Spoon teaspoonfuls
of almond mixture, 5cm apart,
onto prepared tray. Bake for
1 5-20 minutes or until pale
golden and firm to touch.
Stand tray on a wire rack until
macaroons are cold. Serve.
Peach and passionfruit bread
Preheat oven to 180°C. Line a large loaf tin with
baking paper. Sift 2 cups self-raising flour into a
medium bowl. Add

buttermilk in a separate
medium bowl and whisk with a
fork to combine. Make a well in
centre of dry ingredients, add
egg mixture and 410g can

Peaches in Passionfruit-
Flavoured Sauce and stir
with a fork until just combined.
Spoon mixture into prepared
tin. Bake for 35-40 minutes or
until well risen, firm to touch
and golden brown. Stand cake
on a wire rack to cool before
turning out. Slice and serve
with butter, if desired.

Chicken and soba noodles
Pour 3 cups boiling water into a heatproof jug. Add
3 orange pekoe tea bags and leave for 3-4 minutes.
Remove tea bags, then add juice of 1 orange. Put
3 small Lilydale Free Range
Chicken Breasts in a heavy-
based pan over a medium heat.
Pour over tea mixture and cook,
covered, for 7-8 minutes.
Remove pan from heat and
leave chicken in liquid until
slightly cooled. Shred chicken
and reserve liquid. Put chicken,
shredded snow peas, sliced
green shallots and pink ginger
in a bowl and toss to combine.
Toss cooked soba noodles with
1 tsp sesame oil and 1 Tbsp
rice vinegar. Serve chicken
mixture with noodles, sprinkle
with sesame seeds, then spoon
over warm reserved liquid.
